“Wilted Wild Broccoli Salad with Apple”
1 bunch wild broccoli sauvage
1 apple
1/2 lemon
1/2 tablespoon mustard
2 tablespoons soy sauce
1 tablespoon balsamic vinegar
5 ml water
2 tablespoons olive oil
1/2 bunch chives (optional)
Salt and pepper

Wash the broccoli sauvage and slice any thick stems thin.

Dip them in plenty of boiling salted water and cook 10 minutes. Drain and plunge them into a bowl of cold water to stop cooking. Drain in a colander.

Prepare the vinaigrette: In a bowl pour mustard, balsamic vinegar, salt and pepper. Add the lemon juice and mix. Finally pour the soy sauce, olive oil and water, chives and mix.

Toss the broccoli sauvage with apple, and vinaigrette.
